Lanzarote Photodiary

Kenneth and I just came back from one week on Lanzarote, Canary Islands, which is probably the prettiest place I have ever been in my entire life. Also, it was our first holiday together, so that probably added to the magical feeling as well haha. As you guys know we live in Scandinavia and the winters here are long and cold. It was the perfect time to get away just before spring kicks in here. We had around 21-23 degrees most days and were able to tan, swim in the ocean and wear lighter clothes.
We stayed at Blue Sea Hotel in Puerto del Carmen. The hotel was in the older part of town, but only a twenty minute stroll to the newer part of town with restaurants, bars, and shopping all located on the beachfront. We also spent a day in the capital Arrecife and two days in Playa Blanca (which is literally Paradise on earth) swimming in the crystal clear water and chilling on the golden sand. I can definitely imagine going back to Lanzarote and the Canary Islands again some day. However our next trip is to Gumbet, Turkey in September with Kenneth’s family and I’m very excited about that too.
I’m off from work today, so just wanted to check in and share these photos with you guys. Gonna have a look at the video clips i filmed during the holiday and see if it’s worth anything. Much love! ?

First spring weeks

What I’ve been up to the past few weeks includes a bit of modelling, pretty much being siamese twins with my blue haired friend Rebecca, helping other friends move and pack down their apartments emptying their liquor cabinets while looking pretty in red, enjoying the sun when it’s out, being addicted to eBay shopping, kitty cuddles, black and white clothes and having the moodswings like a crazy person. Just thought I wanted to share this bunch of personal photos with you, even the cringe-worthy party photos from last friday. The beauty can not be described, haha.

Neon red hair

The past six months has sort of been a hair adventure for me. I’ve been through pink, blonde, yellow, green and every nuance of purple you can imagine before ending on a very stubborn unwelcome blue. For a few months I’ve been playing with the thought of going red, just try to it. Red used to be one of my favorite colors that you would always see me in when I was younger, and so yesterday boredom hit me and I went red. I still prefer my pastels, but this is gonna be fun for a while. After this I have one more (very drastic change of) hair color I wanna try out before I go back to pale pink and bleached brows. Oh ps. I forgot my flat iron in Germany, so I’m kind of in the middle of a hair crisis.
What do you guys think? I’m very excited for your reactions! ♥

Days to recharge

This is what you’ll find me doing on days where I just need a break to reconnect with myself and find new energy. Shamelessly having breakfast in bed with a bunch of magazines and comfy, cuddly socks. Yoga on my carpet before taking a long shower, then pampering my skin with DIY masks, mixtures and different oils. Catching up on blogs and videos while eating lunch and sitting by my computer. Fixing my nails, hair and watching tons of movies will most likely also be on my list.

Banana cupcakes with cream cheese frosting and white chocolate

As I told you guys I wanted to bake some pastel cupcakes and cookies for christmas, and here comes a recipe. They taste delicious, but after having survived three trainrides and an hour in a hot bus they don’t really look that yummy anymore. Here’s what you will need:

The cupcakes

150 grams of soft butter
150 grams of sugar
1 egg
1 dl. buttermilk
1/2 teaspoon of natron
a pinch of salt
a pinch of baking powder
130 grams of flour
3 small or 2 large mashed bananas
Paper muffin cups
Metal muffin cups

Preheat the oven to 160C. Whip together the soft butter and the sugar until it’s white and fluffy. Whip the egg in, then add vanilla, the mashed bananas, the buttermilk and whip it again. Put all the dry ingredients together in a seperate bowl, mix it and then add the dry ingredients to the wet before whipping everything together one last time. Now put your paper muffin cups in the metal ones and fill the muffin cups 3/4 with the dough. Bake the muffins for around 30 minutes and let them cool off before decorating.

The Frosting

150 grams of soft butter
150 grams of philadelphia cream cheese
320 grams of icing sugar
1 teaspoon of fresh lemon juice
Vanilla
Food color
1 bar of white chocolate

Mix together the soft butter, the cream cheese, the icing sugar, lemon juice and vanilla and play around with the food colors you like. I divided the frosting into two bowls. For the pink frosting I used a few drops of red food color and kept adding more to achieve the perfect princess pink. For the purple I started with blue (which turned the mix mint green) then pink and then blue again and kept adding more and more until I was satisfied. I applied it with a piping bag and blended it a bit more with a spatula. Lastly I chopped one bar of rich, white chocolate and sprinkled it on top. Enjoy, and let me know if you do this guys!

My family all loved these cupcakes and have all asked for recipes, so I definitely think they were a success. I really wanted to take nice photos, but my new camera is still on it’s way to me, either arriving tomorrow or on the 27th 🙁 It’s so hard to stay patient when you’re absolutely the opposit, I even called the mail office and got them to send it to another mail office closer to my family haha. Hope you can live with iphone pictures a little longer and also I hope everyone is having a wonderful christmas time! Can you guys believe it’s the 24th in two days, ohmygod?
